If I follow a certain route, say, or a loop, is there some way to describe it on my list of birding sites? Currently I just say something like "roads west of (named) town. I would think this might be similar to a BBS route. Is there a format for such?

There’s no specific format for naming your locations. Keep in mind, however, that others will be trying to make sense of whatever you use for location names, so it’s generally good practice to avoid shorthand or personalized codes for locations. The way you’re doing it is fine. You might try something like “Carmel Valley—Holman Road”.
One thing to keep in mind is that eBird thrives on location specificity. The more accurate you are when plotting locations the more we can do on the analytical side. For traveling counts, it’s a best practice to try to keep them at segments of 5 miles or less. The shorter the better.
